Ham and Cheese Toasties

Nothing beats a toastie sammy for a quick lunch! Here' we’ve used the Pipi’s Super Spinach Pizza bases as our bread, toasted to crispy crunchy perfection and filled with our fave fillings.

Toasties

Now you really have to make what you like here... I've done ham and cheese, but anything goes for toasties!

Ingredients:

  • Pipi's bases (any will do, I used Super Spinach here)
  • Olive oil
  • Salt
  • Cheese (I'd recommend something like gruyer, but whatever you have will do)
  • Free-range ham
  • Sliced pickle
  • Mustard

Instructions:

  1. Set your fry pan on to no more than medium heat.  You could also use a sandwich press if you can control the temperature.
  2. Slice up your Pipi's bases into wedges or sandwich type shapes.
  3. Top with your mustard, ham and cheese and press together.
  4. Pop 1 tbsp oil into the fry pan and gently toast the first side.  A lid could help get the heat through to melt the cheese.  Turn over and repeat - you may need some more oil if its looking dry.  
  5. The key of the game is low and slow - don't rush it.  The heat needs to get through, so it's going to take about 10 minutes to cook.
  6. Cool for a couple of minutes before slicing so your cheese doesn't go west.  Sprinkle with a little salt, maybe some herbs if you are feeling fancy!
