GRILLED HALOUMI AND AVOCADO

This delightful recipe idea is featured front and centre of our original recipe Pipi’s bread base packs. Avocados are one of those things that seem to cost either an arm and a leg, or they are so cheap you end up with too many. Paired with the salty, squidgy, crispy deliciousness that is haloumi, you can have yourself that decadent treat or summer lunch staple knowing you are eating a pretty balanced meal. We give no quantities here – use as much or as little of each ingredient as you like to get it just perfect for you.

ingredients:

Pipi’s bases in either garlic or original recipe

Pizza sauce or chutney of your choice (here we used a tomato based sauce, but mango would be equally divine along with any other sauce)

Avocado

Haloumi cheese

Olive oil

Fresh basil

Salt and pepper

instructions:

1.      Slice haloumi cheese about ½ thick.

2.      Lightly fry in a drizzle of olive oil over a med-high heat until golden – flipping once. (this takes about 2 minutes per side).

3.    Toast up the pipi’s bases in your toaster or under the grill. 

4.    Warm up a little of the pizza sauce in your microwave if you are toasting, or spread on the Pipi’s bread halfway through grilling. 

5.    Brush the warm toasted Pipi’s bases with olive oil. 

6.    Smear with your base sauce and layer up the haloumi and avocado.  

7.    Tear a couple of basil leaves over the top and sprinkle liberally with salt and pepper.

NOTES:

This is one you definitely want to eat warm.  Haloumi goes a bit too squeaky when it cools and can feel like you are eating rubber.  When it’s still warm though… mmmmm!
