This is your classic caprese salad meets marguerita pizza and gosh is it fresh! It features on the front of our garlic recipe Pipi’s bread bases. When those hot summer days hit and you want that taste of the Mediterranean sunshine to go with it, this is the recipe for you!
•Pipi’s bases in either garlic or original recipe
•Hummus (or other mild base)
•Salt and pepper
•Toast up the pipi’s bases in your toaster or under the grill.
•Brush Pipi’s bases with olive oil.
•Smear with hummus or other base
•Layer up the tomatoes, basil and mozzarella.
•Sprinkle with salt and pepper and drizzle with olive oil.
Best served on a patio or balcony, under the sunshine. Enjoy with a glass of crispy rose or pinot gris to really taste the flavours of Italy.
